Peeling produce (especially tomatoes) is enhanced when done in an electric field. 





The typical means of peeling tomatoes is by either applying steam or by soaking the fruit in a strong sodium hydroxide solution (lye).  A very nice peel can be achieved by adding an electric field to a very dilute sodium hydroxide solution.
